为弥补茶叶品质感官审评存在的缺陷,利用计算机视觉技术对茶叶品质进行快速无损评价研究。以碧螺春绿茶为对象,依据专家感官审评结果,将茶样分成4个等级;采用中值滤波及拉普拉斯算子对茶样图像进行预处理,并提取预处理后的茶样图像的颜色特征和纹理特征以表征茶叶图像的外形特征,利用随机森林算法对茶叶外形特征属性进行重要性排序;筛选出重要性较大的特征及随机森林算法中最优的决策树棵数建立感官评价模型,并与建立的支持向量机(SVM)模型性能相比较。结果表明:色调均值、色调标准差、绿体均值、平均灰度级、饱和度均值、红体均值、饱和度标准差、亮度均值、一致性等9个特征属性的重要性较大,且与感官审评特征描述结果相一致;当采用优选出的9个重要性较大的特征及决策数棵数为500时,建立的模型性能最优,模型总体判别率为95.75%,Kappa系数为0.933,OOB误差为5%,较SVM模型分别提高了3.5%,0.066,优选的9个重要性较大的图像特征与感官审评特征描述相一致。研究表明:利用随机森林方法筛选出对茶叶外形特征属性贡献最大的少数几个特征建立模型,模型性能就能达到很好的识别效果,模型得到简化,同时模型精度和稳定性都高于其他方法。  相似文献

The electrochemical oxidation processes that occur during a voltammetric assay in wine samples lead to the formation of species that obstructs the surface and reduce their active area. This effect is critical for screen printed carbon electrodes (SPCE) and leads to abnormal low values of the total polyphenols content of wines, ca. 72 % lower than those obtained with glassy carbon electrodes. This effect was examined using 10 red and Port wine samples. Mechanical polishing and electrochemical‐based treatments for the removal of this fouling layer were tested. The best results were obtained by electrochemical activation in at a constant potential of 1.2 V during 100 s Na2CO3 saturated solution, and by polishing. The success of some of these treatments brings an added value to SPCE, as it opens the possibility of their reuse in the wine analysis. This outcome is particularly relevant for quality control where a huge number of analysis is performed and the reduction of cost may dictates the choice of the analytical method.  相似文献

The present study optimised the ultrasound-assisted extraction (UAE) of bioactive compounds from Amaranthus hypochondriacus var. Nutrisol. Influence of temperature (25.86–54.14 °C) and ultrasonic power densities (UPD) (76.01–273.99 mW/mL) on total betalains (BT), betacyanins (BC), betaxanthins (BX), total polyphenols (TP), antioxidant activity (AA), colour parameters (L*, a*, and b*), amaranthine (A), and isoamaranthine (IA) were evaluated using response surface methodology. Moreover, betalain extraction kinetics and mass transfer coefficients (KLa) were determined for each experimental condition. BT, BC, BX, TP, AA, b*, KLa, and A were significantly affected (p < 0.05) by temperature extraction and UPD, whereas L*, a*, and IA were only affected (p < 0.05) by temperature. All response models were significantly validated with regression coefficients (R2) ranging from 87.46 to 99.29%. BT, A, IA, and KLa in UAE were 1.38, 1.65, 1.50, and 29.93 times higher than determined using conventional extraction, respectively. Optimal UAE conditions were obtained at 41.80 °C and 188.84 mW/mL using the desired function methodology. Under these conditions, the experimental values for BC, BX, BT, TP, AA, L*, a*, b*, KLa, A, and IA were closely related to the predicted values, indicating the suitability of the developed quadratic models. This study proposes a simple and efficient UAE method to obtain betalains and polyphenols with high antioxidant activity, which can be used in several applications within the food industry.  相似文献

唐代陆羽撰写的《茶经》被誉为“茶叶百科全书”,是中国乃至世界上最早关于茶文化的史料,也是保留最完整、最全面的茶学专著。通过探析《茶经》中蕴含的育人价值,挖掘《茶经》中的化学课程资源。在化学教学中,将《茶经》中与化学知识契合的传统文化内容作为情境载体建立学习桥梁,从化学角度对传统文化内容进行再认识,从文化视角感受化学中蕴含的人文底蕴,帮助学习和理解化学知识,增强文化认同感和民族自豪感。依据新课标中的情境素材建议与要求,梳理了《茶经》中可与高中化学教科书相联系的内容,为创设真实的情境提供素材,利用古代茶器具与中学化学实验仪器之间的相似性创设情境。并且提出了关于中学化学教学中有效融入传统文化的几点建议。  相似文献

建立了超高效液相色谱-串联质谱同时快速测定不同茶叶中草甘膦、氨甲基膦酸及草铵膦的方法。样品用0.05 mol/L NaOH提取,并以HCl调节pH值,Oasis HLB小柱净化除杂,氯甲酸-9-芴基甲酯(FMOCCl)柱前衍生反应后,超高效液相色谱-串联质谱法测定。本方法在5~1000μg/L浓度范围内,不同茶叶基质中草甘膦、氨甲基膦酸、草铵膦线性关系良好(R2>0.99)。在0.1,0.4和4 mg/kg添加水平下,不同茶叶(绿茶、红茶、乌龙茶、普洱茶)中3种化合物回收率均介于72.1%~109.9%之间,相对标准偏差RSD在0.5%~9.8%之间(n=6),方法定量限(LOQ)在0.03~0.08 mg/kg之间(S/N=10)。本方法稳定,简便,灵敏,能够满足检测需求。  相似文献

茶叶是大众青睐的健康饮品之一,但茶叶在机器采收和加工过程中,容易混入茶梗和昆虫异物,污染茶叶、影响其质量安全,是未来应防范和检测的重点。X射线成像技术,根据食品基质和异物的密度差实施检测,广泛适用于金属异物并延伸至高密度塑料,但对于茶梗、昆虫这类低密度有机异物尚不适用,所以迫切需要研发新型无损检测技术和方法。针对片状茶叶重叠、遮掩异物的问题,提出了电磁振动上料辅助近红外光谱和荧光图像的检测方案,进行绿茶中的内源性异物茶梗和外源性异物昆虫的在线检测研究。通过电磁振动上料辅助近红外光谱和荧光成像系统,采集了600~1 050 nm范围的近红外光谱600条和RGB-N四通道图像各65幅。采用451条光谱进行建模,其余149条光谱作为预测集,评估模型的性能,比较了去趋势(Detrending)、多元散射校正(MSC)、标准正态变换(SNV)、变权重正态变换(VSN)、迭代自适应加权惩罚最小二乘法(airPLS)、不对称最小二乘法(ALS)、光程估计与校正(OPLEC)等不同光谱预处理方法的处理效果,其中OPLEC能较好地消除散射效应,偏最小二乘判别分析(PLS-DA)模型的正确识别率由78%提...  相似文献

Ultrasound has been applied in food processing for various purpose, showing potential to advance the physical and chemical modification of natural compounds. In order to explore the effect of ultrasonic pretreatment on the complexation of inulin and tea polyphenols (TPP), different frequencies (25, 40, 80 kHz) and output power (40, 80, 120 W) were carried out. According to the comparison in particle size distribution and phenolic content of different inulin-TPP complexes, it was indicated that high-intensity ultrasonic (HIU) treatment (25 kHz, 40 W, 10 min) could accelerate the interaction of polysaccharides and polyphenols. Moreover, a series of spectral analysis including UV–Vis, FT-IR and NMR jointly evidenced the formation of hydrogen bond between saccharides and phenols. However, the primary structure of inulin and the polysaccharide skeleton were not altered by the combination. Referring to field emission scanning electron microscopy (FESEM), the morphology of ultrasound treated-complex presented a slight agglomeration in the form of bent sheets, compared to non-treated sample. The inulin-TPP complex also revealed better stability based on thermogravimetric analysis (TGA). In this study, we established a rapid, sensitive, and specific liquid chromatography method coupled with electrospray ionization–tandem mass spectrometry to evaluate the disposition of resveratrol and its metabolites in rat tissues following oral administration. Here, we validate this method and show that it is useful for quantifying tissue concentrations of resveratrol and its metabolites with acceptable specificity, linearity, lower limits of quantification, precision, accuracy, and recovery. The present study demonstrates that the major distribution of the trans-resveratrol and its metabolites in investigated tissues, which suggests that there is a specified range of target organs for cancer chemoprevention by polyphenols.  相似文献

茶叶样品(1.00g)用水5 mL湿润后加入50mL乙腈高速匀浆提取3min。混合物滤入已盛有固体氯化钠2 g的具塞量筒中,取上清液20.0mL于45℃蒸发至近干,加入乙酸乙酯环己烷(1+1)混合溶剂10.0mL溶解残渣后进行凝胶渗透色谱(GPC)净化。流动相为上述混合溶剂,流量为4.7mL·min~(-1)。收集9~20min时间段的流出液,在45℃蒸至近干,加正己烷定容为5.0mL,供气相色谱分析。采用Rxi-5MS石英毛细管柱进行分离和电子捕获检测器进行检测,所测农药的线性范围为0.02~0.50mg·L~(-1)。检出限(3S/N)在1×10~(-4)~2×10~(-3)mg·kg~(-1)之间。试验测得方法的回收率在83.2%~114.6%之间,测定值的相对标准偏差(n=5)在0.9%~4.8%之间。  相似文献
